Step 1: Basics
ABSOLUTE BEGINNER to blender should start with the one and only Blender Guru:

Step 2: Sculpting
@KeelanJon has a great video about how to sculpt in blender, keep in mind, it's not for a game ready asset so this doesn't include retopo.
