It's an extremely flavourful and thick stew eaten with rice vermicelli noodles, numerous topping and the most aromatic broth you've ever eaten. It' not even that hard to make - let me show you how!
Ingredients you'll need:
Broth:
- 3 frozen basa filets
- 2" piece of ginger
- 5 bay leaves
- 1 tsp dashi powder
- 2 tsps kosher salt
Curry base:
- 3 tbsp vegetable oil
- 2 onions
- 1 head garlic
- 2 stalks lemongrass
- 4 tbsp paprika
- 3 tbsp turmeric
- 400g rice vermicelli noodles
Garnish:
- 1 onion or shallot
- 1 bunch cilantro
- 1 lime
