Here is a delicious meal that is low in fat and loaded in nutrients. It
is also vegan. Enjoy!
Makes eight patties
2 large sweet potatoes -- about 3 cups mashed
1 -15 oz. can black beans -- drained and rinsed
¼ cup finely chopped red onion
2 garlic cloves -- minced
¼ cup finely chopped bell pepper
2 TBS chopped parsley
1 tsp. of cumin
1 tsp. of paprika
1 tsp. salt
1 tsp. black pepper
1 chili pepper -- seeded and membrane removed -- finely chopped (optional)
1 TBS of dried oregano
½ cup bread crumbs -- I used Panko
1 cup cooked quinoa
2 TBS olive oil
Scrub the sweet potatoes and cook them in a pot with water. Peel them and mash them in a bowl. Add all of the ingredients -- except for the oil.
Mix ingredients well and form 8 patties. Refrigerate them for 30 minutes before cooking.
Heat a skillet with the olive oil and add the patties. Cook until bottom side forms a brown crust -- about 2 minutes. Flip and cook for another 2 minutes. Serve with salsa if you want. Enjoy!
