Bajre Ki Kheer

INGREDIENTS
Pearl millet - 120 grams
Water - 500 milliliters
Water - 500 milliliters
Water - 400 milliliters
Desi ghee - 2 tablespoons
Almonds - 2 teaspoons
Cashews - 2 teaspoons
Raisins - 2 tablespoons
Milk - 1 litre
Sugar - 140 grams
Cardamom powder - 1/2 teaspoon
Almonds - for garnishing
PREPARATION
1. Place a strainer on the top of the bowl, add 120 grams pearl millet, 500 milliliters water and wash it.
2. Transfer, this into a bowl, add 500 milliliters water and soak for 30 minutes.
3. Transfer, this into a blender and blend it well.
4. In a heavy skillet, add 400 milliliters water, blended pearl millet and cook for 2 - 3 minutes.
5. Cover it with lid and cook for 7 - 8 minutes.
6. Open the lid and stir well. Remove it form heat.
7. Heat 2 tablespoons desi ghee in a pan, add 2 teaspoons almonds, 2 teaspoons cashews and stir well.
8. Add 2 tablespoons raisins and cook for 1 minute. Remove it from heat.
9. In a heavy skillet, add 1litre milk and boil for 8 - 10 minutes.
10. Add boiled pearl millet and cook for 30 - 40 minutes.
11. Add 140 grams sugar and cook for 10 minutes.
12. Add 1/2 teaspoon cardamom powder, cooked dry fruits and cook for 2 - 3 minutes.
13. Remove it from heat and cool for 30 minutes. Refrigerate for 1 hour.
14. Garnish with almonds.
15. Serve.
