Authentic Kerala Dishes with my personal Touch 😍
Ingredients
All Purpose Flour -2cups 300gm
Sugar - 1 cup
Baking Powder -2 tsp
Spices - 1/4 tsp each
Egg -3
Butter- 200gm
Salt -1/4 Tsp
Orange Juice or any juice -2 cups
Nuts and Dry fruits together -3 cups
For caramel
Sugar -1/2 to 3/4 cup
Hot water - 1/4 cup plus 3 tbsp
Method
Take a mix of nuts and dryfruits around 3 cups. Dryfruits have to cut finely. Nuts have to be ground a bit. Now take a big kadai add this dry fruits and nuts mix to this.Add 2 cups of orange juice. Let the mix be soaked well in the orange juice. The juice will be fully soaked. Now in another saucepan add sugar and 3 tbsp of water. Let the sugar dissolve in this water. Stir occasionally without the spoon. Let the color turn golden brown. Add 1/4th cup hot water nd stir for 5 mins. Keep it aside for cooling down. Now in a bowl add some all purpose flour, ¼ tsp cinnamon powder, ¼ tsp nutmeg powder , ¼ tsp dry ginger powder and ¼ tsp cloves powder. You can grind the whole spices with the sugar and add that to the flour, if you don’t have the spices powdered separately. Add a pinch of salt.2 tsp baking powder. If you are making eggless add baking soda and curd.
In another bowl add 3 eggs. Mix well till fluffy. Add vanilla essence. Add some orange zest. Mix well. Add some powdered sugar. Mix well. Add the melted butter.Mix well. Now add the fruits and nuts mix to this egg mix. Preheat the oven or kadai now. Add the flour mix and fold it into the egg mix. Add ½ of the sugar caramelized syrup.Mix well and if required add the rest of the Carmel mix. Mix well. Add it to the well greased pan. Bake it in either in kadai(preheat for 10 mins – and cooking time is 1 hour) or oven(cooking time 40 mins- 50 mins)
In kadai don’t keep it directly to heat. Keep the cake tin on a ring in the kadai. After the cake cools down you can serve it.
