Rice pudding with black eye peas is Cambodian traditional dessert that you can find it in any markets in Cambodia. We will have Sweet rice and black-eyed peas by being topped with creamy sweet coconut milk.
Ingredients:
* To boil black eye peas
1 cup [235g] Black eye peas
1/2 tsp Salt
Enough water to cover the black eye peas while boiling
* To make the pudding
1/2 cup [115g] Glutinous rice
2/3 cup [180g] Sugar (Add more or less)
1 cup [255ml] Coconut milk
4 cup [1000ml - 1020ml] Water
1/2 tsp Salt
1 Tablespoon Tapioca starch
* To make coconut cream sauce
1 cup [255ml] Coconut milk
1Tablespoon Sugar
1/4 tsp Salt
3 Pandan leaves
1 tsp Tapioca starch
