I couldn’t contain my excitement when I saw figs at the market last week! This is a perfect warm appetizer for spring/summer months. Also, you can’t go wrong with roasted feta🤤
10-12 fresh figs, cut into halves and quarters
8-10 oz grapes, ideally red, purple or black
1 block of feta
5-7 sprigs fresh thyme
2-3 tbsp balsamic vinegar
2-3 tbsp olive oil
1 tbsp honey, I used local tupelo
Pinch of red pepper flakes, optional
Baguette, sliced to serve
Preheat oven to 425°F. Place figs and grapes in a large baking sheet. Drizzle 1-2 tbsp olive oil and balsamic vinegar over fruit and use hands to lightly toss to coat. Bake for about 8 minutes. Remove from oven, place feta in center of fruit, drizzle olive oil and honey on top of cheese (you can add pepper flakes now or after baking). Add thyme to baking sheet and return to oven for 15 minutes or until figs become jammy and grapes begin to burst.
Optional- remove grapes and figs from baking sheet and transfer to serving dish. Return feta to oven to broil for 3-5 minutes.
Serve with sliced baguette and enjoy!
