Baking cookies means spending quality time with my granddaughter like I have the fondest memories baking with my German Oma. I don't want to miss that and this is why we show you a series of three Christmas cookie recipes, oilfree, no dairy, no animal products, whole plant based. Today we made Gingerbread cut-out cookies. Here is the recipe:
Mix these dry ingredients in a bowl:
1 1/2 cups + 1tbsp sifted spelt flour
1 tsp baking powder (aluminum free)
1/4 +1/8 tsp sea salt
1tsp cinnamon
1/8 tsp ground cloves
1/4 tsp ground ginger
1/8 tsp allspice
Pour the following ingredients into your food processor and mix them well:
1/3 cup mashed avocado
1/2 cup sugar
2 tbsp blackstrap molasses
2 tbsp non-dairy milk (almond, soy, oat, etc.)
2 tbsp pure maple syrup
Preheat ovent o 350 degrees F. Line a baking sheet with a silicone baking mat (parchment paper if you have no mat). Pour the dry ingredients into the food processor where you already have mixed the wet ingredients with the sugar. Now mix the dough until it forms a big lump. Take the lump and refrigerate it for about 10 minutes. The dough is sticky. The colder the dough the easier to work with. Take a piece of wax or parchment paper, sprinkle some spelt flour on it and put the lump of dough on it. Cover with a second piece of wax or parchment paper and then roll the dough not too thin, about 1/2 inch. Then cut out cookies and put them on the silicone mat. If the dough gets to warm, roll little balls, press them onto the mat and put marmalade or hazelnuts in the middle to use the remaining dough. Put it in the oven for 11 minutes. Take it out and slide the HOT silicone mat onto your work surface and off the hot cookie sheet. Let it cool for 5 minutes until the cookies come easily of the mat without sticking. Now you can glaze the cookies with melted vegan chocolate or a white sugar-lemon glaze and sprinkle with the cookie decorations of your choice and/or coconut flakes. Enjoy!
