Langue de chat is a thin, crisp and buttery biscuit. Traditionally, it has a long ovular shape, resembling a cat's tongue (hence its name). In this video, I will be making a variation of the langue de chat that's made using molds and ube (purple yam) flavoured. I prefer using molds since it ensures each cookie/biscuit is the same size and thin. The ube extract not only gives it a subtle sweet, nutty flavour but also results in a beautiful vibrant purple colour.

It's the McCormick brand which can also be found in the international aisle of grocery stores.
This recipe makes 26 langue de chat that are 1.7inch (4cm) wide.
