Today we are going to take you back to the old school! That's right! Old school, Jell-O salad perfect for your Thanksgiving table! This one is a real throwback to my youth. Something that my Mommom used to call "Pink Goop". Not the most appeitzing name and certainly not worthy of this delicious and creamy "salad" that is a great addition to your table any time of year. I changed it up a bit, put my own spin on it and now it is given a more fitting name Cranberry Fluff! This was a real treat and we usually only got it for Christmas and Easter. Sometimes for Thanksgiving if we were lucky! I recommend this anytime!
This is a simple dessert salad that you can make anytime. It starts out with cottage cheese then mixed with crushed pineapple and the jell-o flavor of your choice then fold in a container of whipped topping. I am using Truwhip. A whipped topping that I found in the freezer section of my grocer. I like this one because it is GMO free and does not contain high fructose corn syrup, hydrogenated oils or other nasty ingredients that we prefer to try and avoid. It is not often that I even reach for a carton of whipped topping but recently I discovered this one and it is delicious. I still don't use this type of ingredient often, opting to use homemade whipped cream if it will be a viable substitute, but this stuff is great. It does not coat your mouth with that weird oily feeling when you eat it and it has a very nice flavor! Not fake at all!
You just mix this all up and let it chill. Overnight is best, but sometimes you just can't wait. This hits all the spots. Sweet, tangy, creamy and satisfying. Perfect for breakfast, lunch or dinner and you will watch it disappear! I promise!
