A moist, rich and sweet bun cake, and is topped with warm baked apples, a crunchy cinnamon streusel with a gooey cinnamon and brown sugar center and a milky vanilla maple glaze. * Ingredients
Crumb Topping:
Brown Sugar 155g
All-Purpose Flour 180g
Cinnamon Ground 1 tsp
Salted Butter (melted) 113g
Cake:
Almond milk 125g
Lemon Juice (fresh) 20g
All-Purpose Flour 180g
Almond Flour 65g
Baking Powder 1 tsp
Cinnamon Ground 1 tsp
Nutmeg Ground 1/2 tsp
Salt 1/2 tsp
Granulated Sugar 120g
Salted Butter (melted) 113g
Greek Yogurt 100g
Vanilla Extract 1 tsp
Cinnamon Swirl Filling & Topping:
Brown Sugar 80g
Cinnamon Ground (divided) 1 tbsp +1 tbsp
Apples (chopped) 2 medium
Maple Glaze (Optional):
Condensed Milk 50g
Maple Syrup 50g
Vanilla Extract 1 tsp
* Instructions:
1. Preheat the oven to 350F. Grease and line an 8x8” baking pan with parchment paper. Set aside.
2. Prepare crumb topping. In a medium bowl, combine the brown sugar, AP flour, cinnamon, and melted butter. Mix with a fork until well combined and crumbly. Cover and place into the fridge until ready to use.
3. Prepare cinnamon apples. Add the chopped apples to a large bowl, and toss with 1 tbsp of cinnamon. Set aside.
4. Prepare cinnamon swirl filling. Combine the brown sugar and other 1 tbsp of cinnamon together in a small bowl. Set aside.
5.Make the cake batter. In a large l bowl, whisk together the almond milk and lemon juice. Set aside and let sit for a few minutes.
6. In a medium bowl, whisk together the AP flour, almond flour ,baking powder, cinnamon ground, nutmeg ground, and salt. Set aside.
7. Add the melted butter, yogurt, vanilla extract and granulated sugar to the almond milk/lemon juice mixture. Whisk to combine.
8. Add the dry ingredients to the wet, and mix until just combined.
9. Assemble and bake. Spread half of the cake batter into the bottom of the prepared pan. Sprinkle the brown sugar/cinnamon mixture all over the surface, then top and spread with the rest of the cake batter. Scatter the cinnamon apples all over the top, and then top with the crumb topping.
10. Bake at 350F for 55-60 mins, or until a toothpick inserted into the middle comes out clean.
11. Make the glaze and serve. While the cake is cooling, make the maple glaze by whisking all of the ingredients together in a small bowl.
12. Drizzle the cake with the maple glaze. Slice and serve.
