Potato and Cauliflower Curry (Aloo Gobi) 🥔🍚🌿
Aloo Gobi is a potato and cauliflower curry from Northern India. It is a healthy dish that is fragrant, filling, and flavorful. I really enjoy trying new dishes from other countries, because there is so much to learn and appreciate. Hope it inspires you to do the same!
Ingredients:
-1 head of cauliflower, cut into florets
-3 roma tomatoes, small diced
-2 large yellow potatoes, large diced
-1 red onion, small diced
-4 garlic cloves, minced
-2 green chilies, thinly sliced
-1 tbs ginger paste
-2 tsp turmeric
-2 tsp chili powder
-2 tsp ground coriander
-1 tsp cumin seeds
-1 tsp salt
-1/2 cup of water
-1/4 cup neutral oil for cooking
-freshly chopped cilantro
Instructions:
-set a wok or large pot on medium-high heat and add the oil
-toast the cumin seeds for 30 seconds until fragrant
-sauté the onion until translucent and add in the garlic, green chili, and ginger; mix well
-add in the salt, turmeric, chili powder, and ground coriander; mix well and bloom spices for 1 minute
-add in tomato and sauté for 2 minutes
-add in potato and cauliflower; mix well
-pour in about a 1/2 cup of water; cover and bring to a simmer
-remove the lid for the rest of the cooking process and mix the curry every 2-3 minutes until the potato is fork tender
-mix in a handful of fresh cilantro
-serve with basmati rice and garnish with more cilantro
-enjoy!
