With 3 basic ingredients you can make a delicious and healthy cookie. It is like banana bread in a cookie, but it is healthy and so easy to make. This healthy cookie recipe can be used as a breakfast or snack. It starts with oats and bananas and comes together in one bowl for easy clean up.

Healthy Oatmeal Cookie Recipe:
1. 2 medium ripe bananas
2. 1/2 cups oats (1 cup quick cooking oats and 1/2 cup rolled oats)
3. 1/2 cup chocolate chips (or raisins, nuts, dried cranberries etc)
Optional ingredients:
- 1/2 tsp. salt
- 1 tsp cinnamon
- 1 tsp. vanilla
- 2 TBSP maple syrup or honey
1. Mash banana with back of fork or potato masher
2. Add oats and mix
3. Add chocolate chips and any optional ingredients
4. Heat oven to 350 degrees fahrenheit
5. Scoop mixture onto silicone mat or parchment paper covered cookie sheet.
6. Form in to a cookie shape.
7. Bake at 350 degrees for 15 minutes
8. Cool completely and store in refrigerator for a week or in the freezer for up to 3 months.
