This week's addition to our vegetarian series is a classic - a good old veg pie. Perfect for those chilly evenings, it's the ultimate comfort food.
The mixed veg and potato, creamy sauce and fluffy pastry - means you get a healthy balanced meal with your greens whilst also satisfying your taste buds.
Ingredients:
1 tbsp butter
1 med-large onion
1 tsp garlic paste
650g potatoes
400g mixed veg (I used a frozen veg packet)
2 tbsp plain flour
500ml vegetable stock
1 tsp ground black pepper
1 tsp crushed green chilli (optional)
50ml single/cooking cream
1 egg
1 pre-rolled pastry sheet
Method:
1. Heat a large pot on medium heat and then add the butter. Once the butter has melted, add the diced onions and stir often until the onions have softened. Then add the garlic paste and mix well until the onions have darkened in colour to a golden brown.
2. Add the cubed potatoes and mixed veg and give everything a thorough stir.
4. Now add the plain flour and combine well.
Then pour in the vegetable stock and give it another stir. Then add in ground black pepper and crushed green chilli if you're looking to give your pie that extra kick.
NOTE: the stock I use has salt added already which is why I don't add any extra salt. Feel free to add any extra salt to taste here if desired.
5. Cover pot and leave to cook on low- medium heat for 20-25 minutes. Then pour in the cooking/single cream and stir well. You may leave to slowly simmer on low heat if you desire a thicker consistency. Once cooked, pour the vegetables and potato filling into a large oven dish.
TIP- don't worry too much at this point if some of the potatoes haven't fully cooked through as they will continue to cook when the pie bakes in the oven.
6. Once the filling has cooled slightly, coat edges of the oven dish with eggwash (this helps to prevent the pastry from sticking to the dish) and then place 1 sheet of pre-rolled pastry on top. Coat the pastry with some eggwash and make a few holes across the pastry sheet with a fork.
7. Bake in the oven at 180c for 20-30 minutes or until the pastry is golden.
