I'm very emotional over this recipe.
Background story: My mum was in central African republic, raise in Niger, from Benin. She got married to a Ghanaian and lives in Togo since then.
So when I was young my aunt (who lives in central African republic) made this stew and I loved it. And for the past 5 years I was asking for the recipe but she didn't remember the stew I was talking about... It been so long...
I went to my friend (who is from Sierra Leone by the way) house last week, and what do you know?? She serves me: The cassava Leaves soup with peanut... That was the soup!! that was the soup!!
And she gave me the recipe!!...I called Tata and told her!
2 bags cassava leaves, pounded
300g meat wash, cut into cubed, seasoned and cooked
1-2 cup of peanut butter
200 ml palm oil
1 fish, any of your choice (tilapia or mackerel)
1 onions, finely chopped
Hot or chili Pepper, to taste
2 bouillon cubes (or Maggi cubes)
2 tablespoons crayfish, ground (optional)
3-4 cups water
3 tsp garlic, 2 tsp ginger, 1 tsp black pepper
Salt, to taste
2 sacs de feuilles de manioc, pilonné
300g lavage de la viande, coupée en cubes, assaisonné et cuit
1-2 tasse de beurre d'arachide
200 ml d'huile de palme
1 poisson, toute de votre choix (tilapia ou le maquereau)
1 oignons, hachés finement
Hot chili ou de poivre au goût
2 cubes de bouillon (ou cubes Maggi)
2 cuillères à soupe d'écrevisses, sol (en option)
3-4 tasses d'eau
3 cuillères à café d'ail, 2 cuillères à café de gingembre, 1 cuillère à café de poivre noir
Sel, au goût
