Samo rice - 3/4 cup (125 grams)
Sendha Salt - 1/3 tsp or to taste
Black pepper - 1/4 tsp (freshly grounded)
Oil - 1 tsp for kneading
Oil - for frying
Directions
Getting ready:
1. After rinsing the samo rice, soak them in water for 2 hours. Then drain out the excess water and grind the rice finely in a mixer jar.
Making:
2. In a heated pan, add the fine paste of samo rice and roast for a minute or so while stirring constantly until it turns dense in consistency and is cooked through. Transfer the paste in a plate and let it cool down a little.
3. To the batter add the following ingredients - 1 tsp oil, sendha salt and freshly ground black pepper and knead until smooth and soft. Dough for making pooris is now done and ready.
4. Heat enough oil in a wok for frying the pooris. Meanwhile grease your hands with some oil and divide the dough into small lumps and keep them covered.
5. Spread a polythene sheet over the rolling board and grease it with some oil. Place the dough ball over the sheet and grease it some oil as well. Fold the sheet into half covering the dough ball and roll it out into thick poori using your fingers.
6. Separate the poori very gently from the sheet and slide it gently into the oil. Press it down gently with a ladle to puff the poori up. When the poori turns golden brown, drain it out on a plate covered with absorbent paper. Similarly fry rest of the pooris as well.
Serving:
