In this episode of Wisconsin Foodie, Luke takes a detour from our typical Foodie path and finds himself in Detroit, Michigan in search of some of the best “Detroit Style” pizza. Loui’s is famous for their pies and what makes them so special is WI brick cheese. Luke meets with the owner and head pizza maker to try his hand at making this unique style of pizza. Brick cheese is the key ingredient in Detroit Pizza and there is one cheesemaker that stands out in Wisconsin, Widmer’s Cheese. Luke gets a tour of the process at Widmer’s and finds out the story and origin of Brick cheese.
