Ingredients A:
(For grinding)
- 7 shallots
- 2 garlic
- 5 red chillis
-6 chilli padis (can add more)
- 1 inch ginger
- 1 inch fresh tumeric
Ingredients B:
- 1 whole chicken
- 1 lemongrass bruised
- 5 lime leaves
-1 fresh tumeric leaf
- 2 green chillis
- 1litre coconut milk
Methods:
1) Fry the chicken lightly and keep aside
2) Grind ingredients A into a paste
3) Add 7 tablespoon of oil on a heated pan
4) Add grinded paste and stir well until the oil separates
5) Add lemongrass, tumeric leaf , green chillis and 3 lime leaves
6) Add the fried chicken and mix well
7) Add in the coconut milk and salt and let it simmer for 10 minutes
8) Finally , add remaining 2 lime leaves and off the stove
