Lahori Chana Written Recipe With Directions
Ingredients:
-Chickpeas (bareek wala safaid chana) 250g
-Baking soda (metha soda) ½ tsp
-Water (pani) less than 1 liter
-Salt (namak) ½ tsp
-Water (pani) more than 1 liter
-Baking soda (metha soda) ¼ tsp
-Salt (namak) ½ tsp
-Cooking oil 1 cup
-Black peppercorns (sabut kali mirch) 10-12
-Bay leaves (tez patta) 1
-Black Cardamom (badi elaichi) 1
-Green Cardamom (choti elaichi) 2
-Cinnamon stick(dar cheeni) 1 ½
-Cloves (laung) 3-4
-Star anise (badiyan ka phool) 1
-Red chili flakes (adh khuti lal mirch) ½ tbs
-Onions (piyaz) medium 4
-Ginger garlic (adrak lehsan) paste 1 tbs
-Cumin seeds (zeera) 1 tsp
-Dried coriander (khushk dhania) powder 1 ½ tsp
-Turmeric (haldi) powder ¼ tsp
-Cumin seeds (zeera) powder ½ tsp
-Yogurt (dahi) whisked 4 tbs
-Green chilies (hari mirch) 4-5
-Black pepper (kali
mirch) powder ½ tbs
-Tetra pack milk (dhodh) as required
Directions:
-In a bowl, add chickpeas, baking soda and water. Mix well, cover, and soak it overnight.
-Wash the chickpeas properly.
-In a pan, add water, chickpeas, baking soda, and salt. Mix well, cover, and bring it to a boil on medium-low flame.
-In another pan, add cooking oil and heat it on medium flame.
-Now, add black peppercorns, bay leaves, black cardamom, green cardamom, cinnamon stick, cloves, star anise, and red chili flakes. Mix well and cook it on medium flame until the color of the oil changes.
-In a blender, add onions and water. Blend well and make a paste.
-In a blender, add a small quantity of boiled chickpeas and make a paste of it.
-Now, add the onion paste and cook well for 2-3 mins.
-Then on medium flame, add ginger garlic paste, cumin seeds, and dried coriander powder.
-Add turmeric powder, cumin seeds powder, and yogurt. Mix well and cook it on low flame.
-Add the boiled chickpeas and paste of boiled chickpeas. Mix well and cook it on medium flame.
-On medium-low flame add the left-over boiled water of chickpeas. Mix well and cook it for 3-4 mins.
-On low flame add green chilies and black pepper powder. Cover and cook it for 4-5 mins on low flame (dum flame).
-Add tetra-pack milk and cook it for 4-5 mins on low flame.
-Dish out, serve, and enjoy with nan or roti.
