I’ve chosen to bake pastries in celebration of the upcoming new year.
I’m going to bake Ramsari Qottab among other traditional pastries for the new year.
The reason is that it makes me think of my sweet childhood memories. Qottab is a kind of pastry with a cotton-like texture and a variety of fillings inside.
The Qottab I made was the Ramsar-specific kind, made with a mix of walnuts, powdered sugar, and cardamom.
You can bake it in the oven, but I used Sartash-Bontash method, which is an old baking method used by rural women.
The cardamom and walnut in this pastry are the key to its incredible flavor, and because it’s baked over a wood fire, it gets a smokey flavor that enriches its already mouthwatering flavor.
🔵Ingredients for 3.5 kilos of Qattab:
2 Cups of Milk
200 gr of Cream
6 Eggs
1 Cup of Cooking Oil
1 Cup of Sugar
2 Tablespoons of Active Dry Yeast
1 Tablespoon of Baking Powder
2 kg of Pastry Flour
Half a Teaspoon of Salt
500 gr of Walnuts
500 gr of Powdered Sugar (Confectioners' Sugar)
2 Teaspoons of Cardamom Powder
