Ingredients
Makes: 12 servings
2⁄3 cup (150 g) sugar (if you like your cakes very sweet, add a little more) + 1 tablespoon (10 g ) sugar
2 eggs
1⁄2 cup (100 g) vegetable oil
1 teaspoon vanilla extract or 10 g (1 tablespoon) vanilla sugar
1 1/2 cups (225 g) flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (120 mL) milk
Apricots (to taste)
Directions
Preparation: 10 min
Cook: 35-45 min
Ready in: 45-55 min
1. Preheat the oven to 350 F/180 C.
2. In a medium bowl, cream together the sugar, vanilla, eggs and vegetable oil. Lightly whip.
3. Add flour, 1 teaspoon baking powder, 1/4 teaspoon salt and milk. Mix until smooth.
4. Put the dough into the baking pan. Place the apricots on top, cut side down.
5. Bake in a preheated oven to 350 F/180 C for 35-45 minutes or until the cake is light golden. Using a toothpick inserted in the center to test for doneness.
Top with powdered sugar, mint leaves, apricots.
