Palitaw is a Filipino version of the Japanese mochi. It's a small patty of sweet glutinous rice cake enrobed with grated coconut, and topped with sugar and roasted sesame seeds. Palitaw comes from the Tagalog word litaw, which means to float or to rise. This is a perfect description of what the rice cake does when boiled. As it cooks, it gently rises and floats to the surface of the boiling water, signalling that it’s ready to be enjoyed. This chewy and smooth mochi looks like clouds in the sky, so I decided to call it mochi clouds. The coconut and sesame seeds add a delicate flavor to this perfectly sweet Filipino dessert!

► Mochi Clouds - “Palitaw” Filipino Dessert Recipe
Ingredients:
2 cups mochiko or glutinous rice flour
1 cup water, room temperature
½ cup granulated white sugar
¼ cup roasted sesame seeds
2 cups grated coconut, defrosted if frozen
Water, for boiling
Directions:
Place glutinous rice flour in a large bowl. Slowly add water and mix into glutinous rice flour until a smooth dough is formed. You are looking for a dough with Play-doh consistency. Form dough into golf ball size dough balls (about ⅛ cup of dough).
Place granulated white sugar and roasted sesame seeds in a small bowl. Mix well. Set aside.
Place grated coconut in a medium sized bowl or container. Set aside.
Boil water in a pot or a wok. Take one ball and press the center of the ball with your thumb to flatten it, and stretch it out a little bit, about 2-3 inches in length, to form a small patty. Drop patty into boiling water. Add more patty into the pot but do not overcrowd. Boil the rice cakes for about 5 minutes, or until it floats. Remove from the boiling water, draining any excess water, and transfer to a plate.
Roll each rice cake into the grated coconut. Serve immediately, sprinkled with the sugar and sesame seeds topping.
► Tips
Palitaw is best enjoyed on the day it was prepared. But I’ve had success refrigerating leftovers for another day or two. To serve, place palitaw in a small microwave safe place and microwave for about 10 seconds. After warming, sprinkle it with the sugar and sesame seeds topping.
