A rich, salty cheese with notes of yeast and umami from the wash and a smoke on linger. We selected this wheel in June 2017 for further ripening and development at the cheese cave. The cheese was washed weekly in a sour beer and salt solution giving the distinctive yeast and sweet overtones with the slightest hint of sour accompanying a delicate smoke flavour. The beer has contributed a richness and creaminess as well as creating an appealing bright tone to complement the umami flavours. When we first tasted this wheel it was bright, with smoke linger but a little dry; something the beer wash has addressed.
