Christmas is incomplete without some delicious Plum Cake right💁🏻♂️? So let's make an eggless version made with the warmest of spices, which has no alcohol and requires no advance soak🥰 Make this show-stopper dessert for your gatherings this year & spread festive cheer in the sweetest way possible✨❤️
For the soak
✨3/4 cup orange juice
✨1 tbsp lemon juice
✨1 cup tutti frutti
✨1/4 cup raisins
✨1/4 dried apricots, chopped
✨2 tbsp dried cranberries
✨2 tbsp prunes, chopped
For the cake batter
✨3/4 cup brown sugar
✨1/2 cup oil
✨1 cup yogurt
✨1 + 1/2 cup all purpose flour
✨1 tsp baking powder
✨1/2 tsp baking soda
✨1/4 tsp cinnamon powder
✨1/8 tsp ginger powder
✨1/8 tsp clove powder
✨1 tsp orange zest
✨1/4 cup walnuts, chopped
✨1/4 cup almonds, chopped
Icing sugar(for dusting)
Process
1. In a saucepan, add orange juice and lemon juice.
2. Now add tutti frutti, raisins, dried apricots, dried cranberries and prunes to the juice mix and cook till all the dry fruits soak up the juices. Set this aside.
3. Pre-heat the oven to 180 degree C and line an 8 inch round cake pan with parchment paper.
4. In a bowl whisk together brown sugar, oil and yogurt.
5. Now add in the dry ingredients- all purpose flour, baking powder, baking soda and all the spices- cinnamon powder, ginger powder, clove powder.
6. Add 1tsp orange zest to dry ingredients.
7. Gently fold in the dry ingredients and mix until everything is well combined and no large flour pockets in the batter remain. Do not over mix at this stage.
8. Keep a small portion of the soaked dry fruits aside and fold in the rest along with the chopped walnuts and almonds in the batter and transfer the batter to the prepared cake pan.
9. Add the soaked dry fruits on the top of the cake as well.
10. Bake at 180C for 50-55 minutes or only until a skewer inserted in the center comes out clean.
