This is a video where I show off the Victorinox Fibrox 6" Boning/Fillet Knife and explain its features.
Essentially, the Victorinox Fibrox is the "budget conscious" knife line that does not skimp on performance. In fact, it is one of the highest-rated knife sets out there!
Cook's Illustrated fell in love with the Victorinox Fibrox 8" Chef's Knife and, since then, all of their knives have been getting a lot of love.
Even with the great price, the knives are all still sharpened to a 15 degree angle (one degree thinner than Shun!) and stamped out of high-carbon stainless steel. The blade is ~55 hardness.
If you want a great knife at a great price, and don't care about a brand name or what the knife looks like, this is your guy!
