I found this gem of an idea floating around one of the multiple forums or websites I'm on looking at BBQ content... I wish I could remember where. But anyways, let's test it out! A steak sous vide in butter before searing it for a nice finish!
I got a couple tri-tip steaks at my local grocery store to try this out. One steak went on a regular reverse sear journey. First smoking on my Traeger to 140F internal before a short rest and a couple minutes of searing on my Weber Go-Anywhere grill with GrillGrates. The other steak took a similar journey but all of the time it spent on the Traeger was in a compound butter bath!
