The creamy cheesecake with crunchy crust. I LOVE cheesecake...be it New York cheesecake, Japanese style cheesecake and more~!
So this is a creamy and decadent New York style cheesecake with a twist...the CRRR...UNCH~~ Yep, the brûlée top crust! the bottom crust I made using Biscoff biscuits, you may use graham crackers too.

Ingredients
For the crust
80g biscoff cookies
35g butter
For the cheesecake
225g cream cheese (softened)
60g sugar (if you prefer sweeter, feel free to add more sugar)
100g sour cream
2 whole egg
12g corn starch
130g whipping cream/heavy cream
5g vanilla extract
4g lemon juice (if you prefer less tangy flavour, do reduce the lemon juice or omit it)
