Russian salad (vinaigrette)
Ingredients
3 C potatoes
3 C beetroot
2 C pickles
1 C peas
1/3 C spring onion
1/4 C vinegar
1/4 cup olive oil
1tsp salt
¼ tsp pepper
1 Tbs honey
Method
Boil potatoes and beetroot until knife soft
Dice all the veg and let cool completely
Combine all ingredients in a bowl
And 1 cup of peas.
Add 1 Tbs honey, toss all together - refrigerate and serve cold.
PS: You can boil all ingredients (beetroot first for 25 minutes and potatoes) in a pot and remove when each is fork tender.
Optional: You can add 3 diced boiled carrots too ½ C sauerkraut, ½ C parsley or dill.
