Vegan Jerk Chicken

INGREDIENTS
6 king oyster mushrooms
1 tbsp nutritional yeast
1 tsp sage
1 tbsp all purpose seasoning
1 tsp allspice
1-2 tsp jerk seasoning
1 pack of rice paper sheets

Coating Seasoning
1-2 tsp jerk seasoning
½ tsp all purpose seasoning
½ tsp paprika
1 tbsp oil

METHOD

Boil the mushrooms in the sage, all purpose seasoning, 1-2 tsp jerk marinade and nutritional yeast for about 10 mins.
drain the water and pat try with a kitchen towel.
Layer the mushrooms slices to form a chicken breast shape
Take one sheet of rice paper at a time and submerge into boiling water for 5 seconds and then drain
Wrap the rice paper tightly around the shaped mushrooms
Brush generously with jerk seasoning
Roast in the oven for 15-20 min at 190c, 375f , gas mark 5 Turning halfway through
