How to Cook Papaitan | Pinoy Exotic Food | Katakam Takam na Papaitan Recipe
Ingredients:
1. Wash beef Innards few times till water runs clear
370 grams - liver
230 grams - heart
550 grams - cuts with fat
180 grams - tendon
300 grams - tripe
370 grams - bones
480 grams - intestine
2. Important: Parboil to expel gamey taste & smell
water - enough to submerge all ingredients
1/3 cup - ginger
8 pcs - bay leaves
1/2 cup - vinegar
***bones + meat + tendon + heart
***intestine + tripe
3. Prepare Rice Water
3 cups - rice
water - save 2nd wash
4. Ox Liver Marinade
***liver
1 tbsp - calamansi juice
1/2 tsp - ground pepper
1 tsp - fish sauce | patis
5. Saute | Simmer
2 tbsp - olive oil
1/2 cup - fatty beef cuts
1/3 cup - garlic
1/3 cup - ginger
1 cup - shallots
***intestine
***beef tripe
***heart
***liver
***tendon + beef bones
1 tsp - ground pepper
3 tbsp - fish sauce
1 cup - vinegar
***beef cuts with fat
2 tbsp - spicy chilis
9 cups - rice water
1/3 tsp - bile (adjust as per liking)
1 tbsp - salt
1 tsp - sugar
1 tbsp - liquid seasoning or 1/3 tsp msg
***beef liver
1 pcs - green chili
2 tbsp - calamansi juice
5 stalks - spring onion
5 pcs - spicy chilis for garnish
Serve Hot! Sprinkle spring onions
Season with: ground pepper + fish sauce + calamansi juice
Cooking Time: not less than 3hours
