Healthy and delicious rice made using spinach and corn. It is basically a fragrant rice dish with corn and spices. It’s a great way to use up corn and since they are flavorful you don’t need a whole other curry or side dish to go with it. A raita/yogurt or achaar/pickle on the side and you are good to go. Palak pulao or Spinach rice is an incredibly easy recipe. I like to make this often as it’s a great way to include greens in my kid’s diet.
Ingredients:
Palak/Spinach - 1 bowl
Corn - 1/2 cup
Basmati Rice - 1 cup
Bay leaf - 1
Onions - 1/2 cup
Cloves/Laung - 5
Cinnamon/Dalchini - 1 inch
Black Cardamom - 1
Ginger - 1 inch
Garlic - 3 pods
Green Chilly - 4
Jeera/Cumin powder - 1 /2 tsp
Turmeric/Haldi powder -1/4 tsp
Coriander/Dhania powder - 1/2 tsp
Garam masala powder - 1/4 tsp
Lime juice - 1 tbsp
Oil - 2 tbsp
Salt - per taste
