Arvi Masala Written Recipe with Directions:
Ingredients:
-Taro roots (arvi) ½ Kg
-Cooking Oil 1 cup
-Onion (piyaz) medium size 1
-Tomato (Tamatar) 2
-Green chillies (hari mirch) 4
-Garlic (lehsan) cloves 4-5
-Ginger (adrak) 1 inch
-Carom seeds (Ajwain) ½ tsp
-Dried Coriander seeds (khushk dhania powder) 2 tsp
-Red chilli powder (lal mirch) ½ tsp or to taste
-Turmeric powder (haldi) ¼ tsp
-Salt (namak) less than ½ tsp or to taste
-Yogurt (dahi) 2 tbs
-Water (pani) 4 tbs
-Grounded mixed spices (garam masala) 1 tsp
Directions:
-Peel and cut taro roots.
-In a bowl, add taro roots and salt and mix well. Now, shift it into a strainer and let it rest for 15-20 mins in sunlight. Then, wash it properly.
-In a pan, heat the oil, add taro roots, and deep fry for 3-4 mins until light brown in color.
-Bring out the taro roots in a strainer and set aside the oil for later use.
-In a bowl, add taro roots, carom seeds, dried coriander powder, red chilli powder, turmeric powder, and salt and mix well.
-In a grinder, add onion, tomatoes, green chillies, garlic, and ginger, grind well, and set aside.
-In a pan, add half a cup of oil and grinded tomatoes and onion paste, mix, and cook well.
-On low flame, add yogurt and mix well. Now add taro roots and cook it for 3 mins.
-Add water, mix well, cover, and cook it for 5 mins on low flame.
-On high flame, add grounded mixed spices, mix well and cook it for 2 mins.
-Garnish with green chillies, fresh coriander, and lemon & serve with roti or nan.
Tips and Tricks:
-While cutting the taro roots, apply oil on your hands to avoid any skin allergy.
-The areas where there is no sunlight, add salt and taro roots in a bowl and mix well. Now, beat it well with the help of a wooden masher or hand beater. Then, wash it properly.
