Today I'm showing you how to make Arepas de Queso (inspired by Encanto!).
Growing up in Queens, NY means that FOOD is at the forefront of everything. We thrive on having so many different types of cultures in our borough, and the best part about living and learning from so many people is my favorite thing: THE FOOD! Ayeeeee.
I don't exactly remember the first time I had one. Whether it was at a corner store, a local restaurant, a friends house or my own house, arepas are like little discs of heaven. They're amazing when your slice them open and stuff them with meats (think of them as a similar use to bread for sandwiches!).
Ingredients:
- 2 cups pre-cooked white corn meal (masarepa)
- 1 cup mozzarella, shredded
- 1/2 cup cotija, grated
- 3-4 cups warm water
- 1 tbs butter
- 2 tsp salt
For the filling I used mozzarella but you can use any good melting cheese, from oaxaca to monterey jack.
