- RECIPES-
* BLUEBERRY PANCAKE *
Ingredients:
- 2 1/2 cup all purpose flour
- 1/2 cup granulated white sugar
- 1 tsp baking soda
- 2 tsp baking powder
-1/2 tsp salt
-1/3 cup unsalted butter ( melted )
- 1 1/2 cup buttermilk
- 2 large eggs
- 2 tsp vanilla extract'
- In a large bowl, whisk together the dry ingredients : flour, white sugar, baking powder, soda and salt.
- Add the melted butter, buttermilk, eggs and vanilla into the flour mixture.
- The consistency of batter will be think, don't over mix.
- Heat a non-stick pan, brush with some butter and pour the pancake batter
- When you see bubbles start to appear over the surface, add some blueberries
- Flip the pancake
- Cook until golden and repeat with the remaining batter.
- Serve with more blueberries and bananas on top, drizzle some maple syrup.
- Enjoy!
* GNOCCHI WITH GREEN SAUCE *
Ingredients:
- A handful of Kale and Spinach
- 2 garlic
- Parsley
- Parmesan
- 2 Tbsp of creme fraiche
- Gnocchi
- tbsp of butter
- lemon
- salt, pepper and lemon
- Bring a pot of water to boil and add some salt
- Remove the stalks from the Kale and chop the leaves.
- Peel and cut the garlic
- Put the Kale, garlic, spinach and parsley and cook till everything is soft
-Transfer to the blender.
- Add parmesan and creme fraiche and blend until smooth.
-Add a splash of water.
- Add butter to a hot frying pan and crisp up the gnocchi
- Cook until it starts to caramelise and smell nuttyc
- Pour in the green sauce and toss to coat
- Finish with salt, peer and a squeeze of lemon juice
- Serve it with extra parmesan and drizzle olive oil
* LASKIASPULLA / SHROVE BUNS *
Ingredients:
- 50g butter
- 3.5dl milk
- 11g dry yeast
- 52g sugar
- 500g flour
- 7g ground cardamom
- 7g salt
Filling:
- Strawberry jam
- 400g heavy cream
- 2 tbsp vanilla powdered sugar ( Vaneliin sugar )
- Melt the butter and milk in the sauce pan and yeast to about 42 C or whatever your dry yeast likes'
- Combine butter and milk mixture with cardamom, sugar and salt in a mixing bowl.
- Add flour little by little
- Knead for 10 minutes
- Leave the dough to rest under a tea towel for about an hour or until it doubled in size.
- Once its ready, put the dough on the surface , knead for a minute or two to completely take out the air.
- Cut and shape into round buns just like regular bread rolls.
- Let the ball rise for another 30-40 minutes in a warm place again
- The second rise is very important so don't forget to do this
- Once the buns look good, brush each bun with egg
- Bake at 200 C for 10-15 minutes until they are nicely browned
- When the buns are brown enough, take them out and let them to cool completely
- Make the cream for filling
- In a mixing bowl, pour heavy cream and powdered vanilla sugar and mix it until you get a hard cream
- Once the buns cooled down, cut a bit of the top part of the bun
- Take the lower piece of the bun, scoop out the small piece from the middle of it.
- Put a spoonful of strawberry jam and add the cream on top, you can put as much as you like.
_ Put the upper piece of the bun ( called the hat ) at the lower piece
- Pour some powdered sugar at the bun to cover the head fully
- Do the same to the other buns.
- Enjoy!
