If you like coconut, or lemon, or both, you will love these sweet energy balls. They're a great grab and go and a good replacement for desert! ;)
Ingredients:
1 1/2 cups whole cashews
1/4 cup coconut flour
1/4 cup unsweetened shredded coconut
1/4 cup fresh lemon juice
2 tbsp agave nectar
1 tbsp coconut oil
Directions:
Place the cashews in a food processor (a food processor is always best for mixing foods as opposed to liquids), but if you don't have one, a strong blender will do the job. Add the rest of the ingredients and blend on high.
Once you have all the ingredients blended, roll the dough into approximately 1 inch sized balls and place them in an air tight container. Put them in the freezer for 20 minutes to firm. Keep stored in refrigerator and enjoy!
