Resepi masakan kali ini ialah asam pedas yang menggunakan ikan pari. Asam pedas biasanya dimasak bersama daun kesum dan bunga kantan untuk menambah rasa dan aromanya. Tetapi disebabkan saya tak rancang terlebih dahulu untuk masak asam pedas ikan pari ni, saya tak sempat nak beli stok daun kesum & bunga kantan. Walaupun asam pedas ini agak kurang bahan, rasanya tetap padu dan semakin sedap setelah dipanaskan. Bagi anda yang teringin nak makan asam pedas tetapi tiada stok daun kesum & bunga kantan, anda boleh cuba resepi asam pedas ini. Selain ikan pari, anda boleh ganti dengan ikan jenis lain dan juga ayam. Saya menggunakan cili merah yang dicampur dengan cili kering kisar supaya asam pedas tidak terlalu pedas dan untuk mendapatkan kuah yang lebih cantik warnanya dan lebih pekat.

Saiz Hidangan : 5 - 6 orang
BAHAN UNTUK DIKISAR:
5 biji cili merah
1 biji bawang besar
2 - 4 ulas bawang merah
3 - 4 ulas bawang putih
1.5 inci kunyit
1.5 inci halia
2 inci lengkuas
1/2 sudu besar lada hitam biji
2 cm belacan *boleh ganti dengan sejemput ikan bilis jika tidak suka belacan
Air secukupnya untuk mengisar
1/3 cawan minyak masak
1/2 sudu besar halba
3 - 5 sudu besar cili kering kisar
6 - 7 ketul ikan pari
4 - 5 cawan air
1/3 cawan air asam jawa (campur dengan 1.5 sudu besar pes asam jawa)
1 biji terung panjang - potong kecil
10 - 15 kacang bendi
2 biji tomato - belah 4
Gula secukup rasa
Garam secukup rasa

This time I'll be sharing my simplest version of stingray assam pedas (hot & sour). Normally, to make delicious and flavorful assam pedas, you need to add in laksa leaves and torch ginger. Actually, I did not make any plan to cook assam pedas, so I didn't managed to to stock these two ingredients. I ended up cooking my assam pedas with just a few basic ingredients available in my kitchen. Fortunately, this assam pedas was so delish and savory! It'll be more delicious after your reheated it. For those who are craving to eat assam pedas but you don't have laksa leaves and torch ginger at home, you can try out this recipe. You can use any fish and meat of your choice for your assam pedas. This assam pedas has mild spiciness since I added some red chilies into the gravy. The addition of red chilies also makes the gravy thicker with more vibrant color.

Serving size : 5 - 6 people
INGREDIENTS TO BE BLENDED:
5 red chilies
1 onion
2 - 4 shallots
3 - 4 cloves of garlic
1.5 inches of turmeric
1.5 inches of ginger
2 inches of galangal
1/2 tbsp of black pepper seeds
2 cm of shrimp paste *you can subs with a small handful of anchovies
Water as required
1/3 cup of cooking oil
1/2 tbsp of fenugreek
3 - 5 tbsp of dried red chili paste
6 - 7 pieces of stingray fish
4 - 5 cups of water
1/3 cup of tamarind juice (mix 1.5 tbsp tamarind paste with 1/3 cup of water)
1 long brinjal - cut into small pieces
10 - 15 ladies fingers
2 tomatoes - cut into 4 parts
Sugar to taste
Salt to taste
