Chicken Kirma Kebab or in Turkish "Tavuk Kirma Kebabı" is an Ottoman Palace dish back from the 18th century. It has simple ingredients, yet with the technique and combination of ingredients turns the simple chicken dish into a festive menu. In the recipe, I am using pearl onions but you can also use onion vedges.
Ingredients For Chicken Kirma Kebab:
3 to 5 tbsp butter
about 6 pieces of chicken thigh (boneless or with bone) and with skin on (I used 4-5 drumstick, 3 thigh
10-12 pearl (baby) onions or 2 small onion (cut in wedges)
1 hot dried red pepper (grounded in portal and pestle or crushed) or use red pepper flakes (the amount is up to you, it is a hot dish but you can add as your preference)
salt, black pepper
about less than 1 cup hot water
to serve: chopped parsley
