Mojo Picon!! Today we are going to see a special dish from the Canary Islands! Patatas Arrugadas con Mojo Picon! which means wrinkled potatoes with mojo salsa, Red and Green! they are very easy to make and if you can't get the Patatas Bonitas, not a problem, just use any small potato. The salsas are also easy to make and you can adjust the recipes if need be! normally in the canaries, you will receive these salsas with more than just the potatoes!

Recipe: for 2 people.
----------------------
Recipe Mojo Verde
-1 or 2 cloves of garlic
-70g Cilantro
-170ml / 5.7oz Oil
-3 TBS Sherry Vinegar
-1 TSP Cumin
-Pinch Salt
-----------------------------
Recipe Mojo Rojo
-2-3 cloves of garlic
-4-5 Cayenne Peppers
-3 Choriceros peppers
-1 Tsp pimenton (Paprika)
-170ml / 5.7oz Oil
-3 TBS Sherry Vinegar
-1 TSP Cumin
-Bead (optional)
-Splash of water, if too thick
-Pinch Salt

Recipe Patatas Arrugadas
- Mini potatos
- Water
- Salt Maldon

Method:
-add water to pan
-add salt
-boil until potatoes are done
-or water evaporates
-put back on the fire to dry
-Enjoy!! :)
