This rustic, traditional Italian chickpea soup, also known as Zuppa di Ceci, is perfect to enjoy during the colder months. We've given the chickpea soup a hearty spin by adding chicken, however you can make this into vegetable soup by leaving out the chicken. If you plan on making this chickpea stew, make sure you leave the garbanzo beans to soak over night and cook them as specified on the package. Once you've soaked the garbanzo beans overnight, the soup only takes 20 minutes to put together and serve. The chickpea soup ingredients are simple. In a large soup pot, you start with the olive oil. Other ingredients you will need are a yellow onion, minced garlic, a carrot, parmesan, escarole and a shell shaped pasta. The soup also calls for chicken broth, however you can substitute for vegetable broth if you have any vegetarians.
