Durians are in season now! Durian is a seasonal fruit, normally in season in the middle and end of the year here in Malaysia. As a King of Fruits, durian has been used in making other delicacies such as pastries, biscuits and cakes.
So as a person who loves baking and eating durian, I try baking a durian cake. Oh yes, you do not have to use good fresh durians. I would sometimes just make durian cake from leftover/or some unripe or over-ripe durians.
The amount of durian flesh/pulp added is just an estimate, roughly around 150-250g depending on individual taste and whatever is available.
The ingredients are:
Plain flour: 250g + 2 teaspoon baking powder
Butter: 250g
Castor sugar : 150g
Eggs: 4 large eggs
Durian flesh/pulp: about a handful or 150-250g
Method: Creaming method as shown in video
Preheat oven : 180C for 20 mins
Bake at 180C for 35-45 minutes
