Ingredients
For the brine
2 liters Water
4 tbsp salt
3 tsp crushed black pepper
3 tbsp crushed garlic
3 tbsp chopped parsley
1 tbsp chopped rosemary1 small bunch fresh thyme
1 tbsp chilli flakes
2 tbsp sugar
Juice of 3 lemons
1.8 kg whole chicken with skin
Note-
*Brine the chicken for 8-12 hrs in the fridge
For the marinations
1/2 cup garlic
1 small bunch parsley
2 sprigs Rosemary
1 tbsp fresh thyme
Season with salt & pepper
2 1/2 tbsp chilli powder
1/2 cup olive oil
3 tbsp butter
For the vegetables
1 cup carrots batons
1 cup radish batons
1/2 cup baby corn1/2 cup yellow peppers
1/2 cup red peppers
5 tbsp sliced garlic
3 tbsp chopped parsley
1 small bunch thyme
4 tbsp olive oil
Season with salt & pepper
Other ingredients
2 1/2 feet string to tie chicken
Notes
*Marinade Chicken for 1 hr
*Bake first at 125°C for 1 -1 1/2 hr with out getting any color
*Bake the second time at 250°C for 30-45 mins till golden
