Creamy Chickpea Pasta with Broccoli and Rustic Cheddar
Ingredients:
- 1 box @eatbanza Banza Chickpea Pasta
- 1 bag of Broccoli Florets
- 3 cloves of Garlic
- 1/2 White Onion
- 4 tbsp @kerrygoldusa Kerrygold Butter (divided)
- 2 tbsp All-Purpose Flour
- 1 can Evaporated Milk (and equal amount of Water)
- 1 tsp Olive Oil
- 6 oz @aldiusa Red Rustic Cheddar, shredded
- 2 tsp Salt
- 2 tsp Black Pepper
- 1 tsp Paprika
- 1 tsp Italian Seasoning
- Optional: Chili Flakes for a spicy kick
Instructions:
1. Cook the @eatbanza Banza Chickpea Pasta according to package instructions. Meanwhile, dice the onion and mince the garlic. Shred the cheddar cheese.
2. In a skillet, heat 2 tbsp butter and oil. Sauté half the minced garlic for 30 seconds, then add the broccoli florets. Season with salt and pepper, and cook until vibrant and crisp-tender. Remove and set aside.
3. For the sauce, in the same skillet, add the remaining butter and sauté onions until translucent. Add the remaining garlic, cooking briefly before whisking in the flour. Gradually pour in evaporated milk and water, stirring constantly until thickened. Stir in the cheddar cheese until smooth, then season with paprika, Italian seasoning, and adjust salt and pepper to taste.
4. Combine the cooked pasta with the sauce, allowing it to simmer for an additional minute to blend the flavors. Serve with the sautéed broccoli on top.
