Ingredients
400ml maple syrup
Method
1 Pour the maple syrup into a medium pan and place on a low heat. Heat gently until the mixture reaches 112c then immediately remove from the heat.
2 Leave to cool for 10 mins, then sprinkle in a pinch of salt and begin whisking. You should feel the mixture thicken and lighten in colour. Once it is a similar texture to peanut butter, it is done. Transfer to a sterilised jar and serve with pancakes or waffles.
