The pout fish makes a unique protein called antifreeze protein (in food products it's usually referred to as ice-structuring protein). This protein grabs ice crystals before they grow too large, which can lower freezing points.
Unilever currently owns a patent to use this ice-structuring protein in food items, so they are starting to pop up in low-fat ice cream and slow melt popsicles.
