Helianthus Tuberosus - Jerusalem Artichokes / Sunchokes. Amazing and super cold hardy perennial vegetable for the permaculture garden. Nearly impossible to get rid of once planted, they are a design challenge for someone who may want to try a plant and wish to 'erase' it later... But for folks who want resilient, reliable and delicious food to securely grow where they live this is an incredible ally.
