Tiffin Sambar Recipe | Easy pressure cooker
Quick pressure cooker Tiffin sambar 🙂
As much as I love arachuvitta sambar, I also make this version which is a welcome change in taste as well as a slightly easier version. If you want authentic version it is also there in my profile, please check.
Ingredients
¼ cup Toor dal
¼ cup Moong dal
¼ teaspoon Ghee
1 cup tamarind extract or 1 tablespoon tamarind paste
10 Shallots peeled
2 Tomato cubed
1 or 2 green chilli slit (Optional)
1 cup Vegetables of your choice, I used radish, broad beans and carrot. But drumstick, potato, yellow pumpkin works well.
Curry leaves Coriander leaves, for garnishing
1 teaspoon Chilli powder - mild spice
2 teaspoon Sambar powder
¼ teaspoon Asafoetida
¼ teaspoon Turmeric
1 teaspoon Jaggery
2 teaspoon Sea salt
To temper
1 tablespoon ghee or oil
⅛ teaspoon fenugreek seeds
½ teaspoon Mustard
1 sprig curry leaves
Instructions
Place toor dal, moong dal in the inner pot. Add 1 &1/2 cups water, ¼ teaspoon ghee.
Pressure cook for 4 Whistles.
Mash the dal well with a ladle. set aside.
Heat a pressure cooker, Add ghee, fenugreek seeds
and mustard. Let it crackle.
In goes a sprig of curry leaves and asafoetida .
Tip in shallots, pumpkin, drumstick, green chilli (if adding) and tomatoes.Add ghee, salt.
Cook for 2 mins. Add all powders –, turmeric powder, red chilli powder, sambar powder and give a quick stir.
Pour in the tamarind extract and 1 cup water. Add jaggery.
Mix well scraping all stuck ingredients if any, in the bottom.
add cooked dal. Do not stir. Pressure cook for 1 whistle in medium flame.
Add more water if needed and mix well.
This is to adjust the water consistency.
Boil 2 mins and switch off. Garnish with few torn curry leaves and chopped coriander leaves.
Notes
Tamarind extract: Soak ½ tablespoon in 1/4 cup hot water for 30 mins & extract with another 3/4 cup water to make it total 1 cup

CUP MEASUREMENTS
Measurements used in all the recipes, unless otherwise specified. My cup measurements are as follows:
1 Cup = 240 ml
½ Cup = 120 ml
¼ cup = 60 ml
⅛ cup = 30 ml
1 Teaspoon teaspoon = 5 ml
1 Tablespoon (tbsp) = 3 teaspoon = 15 ml
2 Tablespoon = 30 ml = ⅛ cup
4 Tablespoon = 60 ml = ¼ cup
