Here’s a simple recipe for a Spanish Omelette (Tortilla Española):
Ingredients
1 Large potatoe (peeled and thinly sliced)
1 medium onion (thinly sliced)
3 large eggs
1/4 cup oil
1/2 tsp black pepper
1/2 tsp chilli flakes (optional
1/2 tsp oregano (optional
Salt to taste
Instructions
1. Prepare the Potatoes and Onion:
Heat oil in a large, non-stick frying pan over medium heat.
Add the sliced potatoes and onion. Cook gently, stirring occasionally, until soft but not browned (about 15-20 minutes).
Use a slotted spoon to transfer the cooked potatoes and onion to a bowl. Season with salt.
2. Beat the Eggs:
In a separate large bowl, whisk the eggs. Add a pinch of salt and black pepper
Gently mix the fresh coriander, cooked potatoes and onion into the beaten eggs. Let sit for 5 minutes.
3. Cook the Omelette:
Heat a little oil in the same frying pan over medium heat.
