To Make Rangoon Puttu
Sooji / Rava - 1 Cup
Cashew Nuts
Raisins
Jaggery - 1 Cup
Coconut - 1 Cup
Cardamom Powder - 1/2 Tsp
Water - 3 Cups
Ghee
METHOD:
1. Take ghee in a pan. Add cashewnuts and roast until golden brown.
2. Add raisins to the pan and saute until they are plumped. Remove the roasted ingredients and eep aside.
3. To the same pan, add ghee and add the grated coconut.
4. Saute for 3-4 mins and keep it aside.
5. For the syrup, take jaggery and water in a saucepan. Let the jaggery fully melt and then turn off the stove. Keep it aside.
6. Take a wide pan and add ghee. Add semolina and saute until it is no more and nicely roasted.
7. Add the melted jaggery and mix well.
8. Once the sooji rava and jaggery are blended well and the mixture is thickened, add the cardamom powder, roasted cashewnuts and raisins. Also add the roasted coconut.
9. Mix well and add ghee. Mix again. Maintain a low flame through out.
10. Cover the pan with a lid and cook the rangoon puttu for 5 mins.
11. Once done, you can serve it hot and nice.
Rangoon Puttu is a sweet which is famous in Chettinad cuisine. It is an easy recipe with basic ingredients like sooji rava, coconut, jaggery etc. You can make this one with in half an hour and enjoy it. So this recipe is ideal when you want to make something quickly when you don't have enough time to cook or guests arrive on a short notice.
