The “Tonda Gentile Trilobata” is a unique hazelnut that grows in the northern Italian region of Piedmont. A favorite among pastry chefs (and home cooks) around the world, this hazelnut is renowned for its sweet flavors and its unique shape. I visited the Ronco Luigina Agricultural Company, a family-run hazelnut farm in Marentino, Piedmont, Italy to see how the family transforms the raw fruit into a variety of different products, including butters and spreads.
