Hi in this video we can see how to make Andhra special Ulavacharu Chicken Biryani in Tamil.This recipe was prepared by Sujitha in Cook with Comali recipe telecasted in Vijay Television.
ULAVACHARU CHICKEN BIRYANI | ANDHRA SPECIAL BIRYANI | COOK WITH COMALI RECIPE
INGREDIENTS
chicken - ½ kg
biryani rice - 2 cups
horse gram - ¾ cup
onions - 4
ghee - 2 tbsp
turmeric powder - ½ tsp
chili powder - 1½ tsp
coriander powder - 1 tsp
ginger garlic paste - 2 tsp
green chilies - 3
garam masala - 1 tsp
cumin powder - ¼ tsp
curd - ½ cup
cumin - ½ tsp
dried red chilies - 2
garlic - 5
star anise - 1
small piece cinnamon
bay leaves - 2
cardamom
cloves - 4
tamarind
jaggery
coriander leaves
mint leaves
curry leaves
mustards
salt
water
oil
METHOD OF PREPARATION
1.Soak ¾ cup horse gram.Cook it in a pressure cook with water and required salt upto 3-4 whistles.
2.Fry 4 onions until it becomes golden brown.
3.Marinate ½ kg chicken with required salt,¼ tsp turmeric powder,1 tsp chili powder,1 tsp coriander powder,½ tsp garam masala,¼ tsp cumin powder,1 tsp ginger garlic paste,2 green chilies,coriander leaves,mint leaves,curry leaves,fried onions and ½ cup curd for about 1 hour.
4.In a pan heat some oil,splutter a few mustard and add ¼ tsp cumin,2 dried red chilies,1 green chili,5 chopped garlic and a few curry leaves.Saute for 2 minutes.
5.Add the water for the cooked horse gram.Add ¼ tsp turmeric powder,½ tsp chili powder and required salt.Let it boil.
6.Grind ½ cup cooked horse gram and add it to the boiling gravy.Mix it well and add some tamarind water.
7.Keep it on low flame until it thicken.At last add some jaggery and off the flame.Once it cools down filter it.Ulavacharu ready.
8.Boil some water to cook the biryani rice.Add ¼ tsp cumin,1 star anise,small piece cinnamon,4 cloves,2 bay leaves,1 green chili,cardamom powder,1 tsp ginger garlic paste,required salt,coriander and mint leaves.Let it boil for about 10 minutes.
9.Add 2 cups biryani rice and cook only upto 50%.
10.Now lets dum the biryani.Add the first layer with marinated chicken with little oil.Then add some ulavacharu.Add the half cooked rice.Add the rice with little water no need to filter the water completely.
11.Add some fried onions and corinader leaves.Then again add some ulavacharu and repeat with the rice and fried onion and coriander leaves.
12.At last sprinkle some garam masala and 2 tbsp ghee.
13.Close it with a heavy object on top.Keep it on low flame for 5 minutes and then on low flame for about 30 -40 minutes.
